‘80 Bites’ enjoyed by all

It was the parents of Corsicana High School 11th graders who toiled over the stoves and ovens last week to make “80 Bites Around the World” pay off last Friday.

The annual event raises money for the junior/senior prom next spring, and this year was certainly a success.

Although each 50 cent ticket punch is just for one or two bites, multiply that by at least 1,000 guests, and you’re talking a lot of food to prepare. Volunteers Kelsey Triplett, Jenni Smith and Meagan Palos dished up 10 gallons of tortilla soup in tiny bowls in just a couple of hours.

Proving that many hands make light work, the parents of cheerleaders all brought different sweets, while another team of junior parents brought brownies. Barbara Kelley and Sheila Garcia were on hand to cut up the many brownies, but it was still over 1,000 tiny brownie bites that had to be cut up and served out.

The premise of the dining experience is to have parents make their own specialties, particularly ethnic dishes, so the community gets a chance to taste something different, while still raising money for the prom.

Misty Fletes, junior sponsor, said the parents of this junior class are “amazing.”

“It was a fabulous year,” she said. “It seemed like there were tons of people there.”

For Kari Cook, one of the things not to miss this year was the chicken spaghetti made by Donna Easley.

Easley certainly had the experience. She does the three-day walk for breast cancer and chicken spaghetti is one of the dishes she makes to raise money and feed the walkers.

“I just made eight times my normal recipe,” she said. “I took two days off to do it.”

Not only is it delicious, she explained, but it’s easy to serve in any size portion, even bite-sized.

Her son, Hunter Easley, who is a junior this year, didn’t have to help in the process, though.

“I made him study,” Donna said.

    The renovation of the Corsicana Police Department got a bit more involved than it was originally intended to. An error with some concrete resulted in water flooding city hall, and forcing replacement of carpeting and flooring. As well, the renovations quickly led to renovations of the municipal court, as well.
